What are my redeeming qualities? Well,I know that I am a caring, honest person that can be truly trusted with any secret.
One quality that I continue to strive for is to live my life "full of grace" I would like to try to affect the quality of everyday in some small way by my words and actions.

Angel Cookies

My little grandson slept over and we baked some Angel Cookies, one of his great grandma Nanny's delicious recipes .They sure were yummy!! He took some home for his mommy and daddy.

Angel Cookies
1 cup butter or margarine
1/2 cup each of white AND brown sugar
1 egg
1 tsp of baking powder
1 tsp of baking soda
1 tsp of vanilla
2 cups flour
1/8 salt
Cream together butter and sugars. Add remaining ingredients and mix until blended. Lightly knead till well mixed and roll into one inch balls.
Place on an ungreased cookie sheet. Flatten with the bottom of a glass dipped in white sugar. Bake at 350 degrees for 8 - 10 minutes.

Creative Art Journal Challenge Week #20



For this week the challenge is 'change'. As I was contemplating what change is for me, I received a call from a dear family friend telling me that her sister passed away this morning.
She has been so sick and struggling for the past 10 years and she is finally free of her failing body so I dedicate my card to her spirit and the change and transition that she made today, and my heart is so sad for her family that will miss her dearly.

Can you believe that we're at week 20! Take a moment this week to admire your creative art work and admire the artist that is YOU!!...and you have made your mark on paper!!!
Do you know that in some some cultures there isn't even a word for 'art' because art is not separate from their daily living. Art is part of life...your life and bravo to you for the work you have done so far.

Lasagna Soup


I taught prenatal classes these last two Saturdays so I made this super easy and delicious hearty Lasagna Soup to share for our pot luck lunch. I found the recipe from Inkspirations and everyone loved it!!

Lasagna Soup

1 lb hamburger (you can use ground turkey or chicken)
1 chopped yellow onion
5 c. water
5 T parmesan cheese
1 can undrained corn
1 can undrained diced tomatoes
1 box lasagna Hamburger Helper
1/2 c. sour cream
1/2 c. shredded cheese

DIRECTIONS: Brown meat with chopped onion. Then in a pot, put water, parmesan cheese, corn, tomatoes and the sauce packet from the Hamburger Helper. Add meat and onion. Bring to a boil for 10 minutes. Then add the noodles and boil ten more minutes. Add a handful of cheese and spoonful of sour cream on top when serving.

I used the same stamp for all the flowers on this card which I created for a challenge at Scrap Love. including the clear ones which I outlined and then added white dots on them. I used an emboss resist technique that I learned from Scraptime.

Calendar Template for Episode #12

Magic 'No Knead' Bread Dough Recipe


This recipe is the base for all yeast dough bread recipes.
Recipe
3 cups water (room temp)
8 Tbl white sugar
6 Tbl oil
1 tsp salt
2 Tbl instant yeast(or 3 envelopes)I use Fleischman's or Fermipan
2 large eggs
7-8 cups white flour (whole wheat does not rise as well)
1. In a larger bowl stir dry yeast and 4 cups of the flour. Set aside.
2.In a separate bowl mix together eggs, sugar, oil and water.
3.Add this liquid to flour and yeast mixture. Blend well.
4. Add remaining flour and salt.Stir.
5.Cover and let rise for 15 minutes.
6. Punch down. DO NOT KNEAD!
7.Repeat steps 5 and 6 twice.
8. Shape into whatever you are creating. Place in appropriate pans. Cover and let rise for one hour.
Bake at 350 degrees for 20-25 minutes.
**This recipe makes 2 loaves of bread.**
For focaccia bread I used Focaccia Bread Spice from Epicure and I mixed it into the dry ingredients in step one as well as brushed olive oil and then sprinkled in on the round loaves after they were baked. The recipe is on the jar. It is so worth getting some!
***If you want to make sweet rolls like cinnamon buns, divide dough into to 2 balls, roll out into rectangle and place your butter, raisins, cinnamon etc. on dough. Roll up and seal ends. Cut and place in greased round baking pans. Yummers!!!

Creative Art Journal Challenge Week #19


The prompt for this week is : surprise! Have you been surprised lately?
I would have to say that the biggest and most recent surprise for me was when my dear friend Laura treated me to a luxury all expenses paid dream vacation to Las Vegas this past October. From the beautiful card (the sentiments I placed on the front of this card) and gift bag full of goodies and chump change she handed to me as we sat on the tarmack waiitng to take off, to the VIP spa treatment, concerts and dining at Emeril Lagasse's resturant, it was a once in a lifetime,treasured experience and a total surprise that I will never forget!

Mulligatawny Soup



OK...I made this soup purely because I love the name of it! Apparently the word 'mulligatawny" is thought to have come from two words in the Tamil language - milaku tanni which means pepper soup, but there is no pepper in the recipe!
If you want your home to smell absolutely fantastic then this is the soup for you!
Recipe
1 whole chicken, cut up
8 cups water
1 1/2- 2 tsp. salt
2 teaspoons curry powder
2 teaspoons lemon juice
1/4 teaspoon ground cloves
1/4 teaspoon cumin
1 medium onion, chopped
2 Tbl margarine or butter
2 Tbl flour
1 carrot,thinly sliced
1 apple, chopped
1 green pepper, cut into 1/2 inch pieces
1 can coconut milk
1/2 cup lentils
2 tomatoes, chopped(optional)
parsley
Heat chicken,water, salt,curry powder,cumin,lemon juice and cloves to boiling in a soup pot and then reduce to simmer.Cover and simmer for approx. 45 minutes. Remove chicken from broth; skim fat if necessary.Add more water to retain 8 cups broth. Remove bones and skin from chicken and shred meat with your hands. Pour broth from pot into a bowl as you will return it to the pot again later. In the same pot cook onion in margarine until tender. Add remaining vegetables. Remove from heat and stir in flour. Gradually whisk in broth. Return to stove and add chicken, apple,lentils, pepper and tomatoes. Heat to boiling and reduce heat. Cover and simmer till lentils are tender,about 15-20 minutes.When ready to serve garnish with parsley.
I also made some homemade foccacia bread to go along with this! The recipe I use is so easy because there is no kneading!!! If you want it please post.

I found the pattern for this amazing knitted grocery bag at Purl Bee and it is called Elisa's Nest Tote. My Italian girlfriend called my bag
'la borsetta' and I love that name!! It only took a couple of hours to knit so I think I'm going to whip up a few more!

Creative Art Journal Challenge Week #18


For this week the art challenge is 'nature.'
Create your card that reflects nature to you. I used a fun masking technique to create my card. I first painted it green then placed a flower mask that I inked over top of to create the background. I mounted the pic onto black card stock and cut the words 'nature'out of cardboard with my Quickkutz to reflect the natural feel
I was trying to achieve.I wrapped some fibre around the card and attached an old piece of jewellery to the end.
One of my most favorite places to view nature is on my front porch just off of our dining room. There is a beautiful Mountain Ash tree in view and you can literally watch the seasons change with just a glimpse out the window. I most love when the Bohemian Waxwings migrate south by the thousands from the North Pole and devour the fermented berries and get a little tipsy!!

Introducing Nana's Soup Kitchen!!


For me, there is nothing more satisfying and comforting than a steaming, hot bowl of homemade soup.
My mission is to attempt to make a pot of soup once a week and post the recipes here on my blog!
Last evening my daughter-in-law and I made some yummy Italian Hamburger Minestrone Soup. It was delicious and the baking powder biscuits we had with it were the perfect compliment. We enjoyed our soup with our spouses and had a wonderful visit. The recipe can be found here.

Been knitting lots lately!

I've been doing a lot of knitting lately and I made this little black turtle neck sweater for my grandson. They never seem to have any dark colors for babies and I think they look cute in black sweaters!!
When I tried it on the first time he couldn't get his head though the opening so I had to re do the neck and make it with a button closure!!!

I also did the following 2 layouts as well.
This one is call Christmas Nuts. My son and his wife arrived on Christmas morning dressed in these nerdy Christmas sweaters and these geeky glasses. It was too funny!

This one is called Yum Yum! and is a layout of my grandson eating his first candy cane on Christmas Day!

Creative Art Journal Challenge Week #17


The prompt for this week is 'your bedroom' which is very fitting for me as I've been spending a lot of time there since Christmas trying to get over a cold and flu bug!!
I love my bedroom and I'm so blessed to have a husband who was able to create a dream room for me complete with a jetted tub, fireplace and flat screen TV! My bedroom is my safe haven; it's where I go to rest, to heal, to laugh, to cry, to sleep, to meditate but mostly, where I find peace.
